I really don't like fish all that much, but every couple of months I start craving salmon. I guess it's my body's way of telling me that I need some omega-whatevers. So...this is what we had for dinner tonight!
This little guy has been sitting in our freezer for awhile and I finally decided on the perfect recipe to use him in. In Juneau, Alaska there's a GORGEOUS lodge called Orca Point. You have to take a boat or a whale watching ship to get out there. They serve an incredible Salmon lunch and this is the recipe for it. Seriously guys...if you don't like fish, you will after eating this! Enjoy!
Orca Point Salmon
1 fresh Alaska salmon filet
1/2 c butter (1 stick)
1/2 c brown sugar
1/4 c soy sauce
1 Tbls lemon juice
Melt the butter in a small sauce pan over low heat. Add brown sugar, soy sauce, and lemon juice. Mix together and then set aside to cool.
Rinse the salmon filet with fresh water and pat dry. Cut the filet into serving size pieces if desired. Place fish (skin side down) in a shallow glass dish. Pour the cooled marinade mixture over the filets and make sure they are well coated. Cover and marinate for 30 minutes.
Pre-heat the oven to 350 degrees and uncover the pan. Bake the fish for 30 minutes or until it just begins to flake. Coat the fish with the marinade every 5 or 10 minutes. For the last 10 minutes of baking, dump out the majority of the marinade so that it forms a nice crispy glaze over the fish.
Serve with rice pilaf, steamed veggies, or dinner rolls!

mmmmm... I love salmon, but I cook it the same ole way everytime. I'm excited to try this!

Are you sure this will make a fish-lover out of me??!?!?!? I really do not like fish, so I NEVER cook it. I don't understand why I don't like it, the rest of my family does. But if you say this will work, maybe I'll build up enough courage to make my husband make it!
By the way, he is dripping with envy at the fact that you are spending the summer in Alaska. He wants to go ssssoooo bad! So maybe sometime when you are down here he can be jealous of Logan.
