Coconut Bread (Jerica)

To me, this should be called coconut cake because it's honestly the sweetest bread you will ever taste. This is my fabulous mother's recipe and it brings back wonderful memories of high school, Christmas, and special occasions that I love so much. So please, enjoy!

Bread:
4 eggs
2 cups sugar
1 cup crisco
2 tsp. coconut extract
3 cups flower
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup buttermilk
1 cup coconut
1 cup nuts

Blend eggs sugar, crisco, and coconut extract. Add flower and dry ingredients alternately with buttermilk. Add nuts and coconut. Bake at 325 for 50 minutes.

Topping:
1 cup sugar
½ cup water
2 Tbsp. butter
1 tsp. coconut flavoring

Boil on low for about 4- 5 min. Pour over bread.

Makes two delightful loaves.
