Mango Salsa Pork
1 pork tenderloin
1 jar of Costco Mango Salsa
I started with a 4 pound peppered/marinated pork tenderloin roast from Costco. I like the peppered meat contrasted with the sweet salsa. You could go smaller or larger depending on how many you are cooking for. I've gotten a smaller one at Albertsons.
I added about 1/4 in. amount of water at the bottom of the crock pot, added the meat, then turned it on high for about an hour and a half.
The pork goes from pink to white as it cooks. After the first hour and a half, empty a little water...maybe about a 1/2 cup, then add about 3 cups of mango salsa (from costco) on top of the meat. Keep on high and let cook for about three more hours. (If you want to you could take a full day and cook it on low). I added more salsa before I served it.
Last time I made this it came out kind of watery ( I think it was from the marinade). But it still tasted great. So you might want to experiment on how to keep it less watery.
serve over rice or with mashed potatoes!

Thanks Maggie! That sounds SO GOOD!! I hope you'll post some more! I was just thinking about what you said about it being watery, that crockpots collect a lot of condensation, so you have to count on there being about a 1/2c. more liquid in the recipe by the end of cooking. I got that tip from the 101 things to make in a crockpot. Awesome cookbook. Did you know you can even make bread in a crock? It's good too! Thanks again!
