Aunt Kathy's Sweet Potato Souffle

Ok, this is slightly belated, since Thanksgiving was last week, but make it now anyways—it’s sooooo good! It’s my favorite dish at Thanksgiving, and in between times too!

Aunt Kathy’s Sweet Potato Soufflé (Casserole)

3 cups sweet potatoes
½ C sugar
¼ C butter, melted
2 eggs, beaten
1 t. vanilla
1/2 C milk

Topping:
1/3 C melted butter
1 C brown sugar
½ C flour
1 C chopped pecans

Peel and chop sweet potatoes, boil till tender, mash (use an electric mixer). Add the rest of the soufflé ingredients and spread in a greased casserole dish. Mix topping ingredients together and put on top of casserole. Make 350F for 30 minutes.

If I remember correctly, Aunt Kathy uses the yellow sweet potatoes, not the orange “yams,” but I don’t really like those and you can’t find them where I’ve been living anyway, so I just use the sweet orange ones! Also, I substitute honey and maple syrup for the sugars, slightly reducing the amount, and it tastes even yummier!
